White Truffle

Tuber magnatum, the white truffle, is a highly prized edible fungus found mainly in Italy's Piedmont region and parts of the Balkans, growing underground in a symbiotic relationship with the roots of oak and other trees. Its short autumn season, strong distinctive aroma and the continued impossibility of reliable large-scale cultivation make it one of the most expensive foods in the world by weight, typically shaved raw over dishes rather than cooked.
