Tuber aestivum, the summer truffle, is a species of truffle found across much of Europe, growing underground in a symbiotic relationship with the roots of certain trees, particularly oak, hazel and beech. Milder in flavor and aroma than the more prized Perigord black truffle, it is nonetheless widely harvested and used in cooking, and its season generally runs from late spring through summer, giving the species its common name.
