The Perigord black truffle is a highly prized underground fungus native to parts of southern Europe, most famously the Perigord region of France as well as parts of Spain and Italy, valued in gourmet cooking for its intense, earthy aroma and flavor that develops as it matures beneath the soil surface. It grows in a symbiotic relationship with the roots of certain trees, particularly oak and hazel, exchanging sugars produced by the tree for minerals and water drawn up through its extensive underground fungal network, and because it produces no visible above-ground fruiting body, truffles are traditionally located with the help of trained dogs or, historically, pigs able to detect their distinctive scent through the soil. Perigord black truffles typically mature during the winter months, developing a rough, blackish exterior and a dark, marbled interior as the spores inside ripen. Because cultivation is difficult and unpredictable even under managed truffle orchards, and wild harvests have declined due to habitat and climate pressures, the Perigord black truffle remains one of the most expensive food ingredients in the world by weight.
