The shiitake, also called the Chinese mushroom or black mushroom and known scientifically as Lentinula edodes, is an edible mushroom native to East Asia and mainland Southeast Asia that is now cultivated and consumed worldwide. The earliest written records of its cultivation date to the year 1209, during China's Song dynasty.
