The charcoal burner, Russula cyanoxantha, also called the variegated russula, is an edible mushroom found mainly in Europe, with a greenish to brown cap four to eighteen centimeters wide, a pure white stalk, and gills that are unusually flexible and greasy to the touch rather than brittle like most Russula species. It forms a mycorrhizal partnership with trees, favoring nutrient-rich, slightly acidic soil in beech forests and mixed deciduous woodland, and is valued in the kitchen for its mild, nutty flavor.
