Garlic

Garlic (Allium sativum) is a species of bulbous flowering plant in the genus Allium, closely related to onions, shallots, leeks and chives. It is native to Central Asia, northeastern Iran and the Himalayan foothills, and has naturalized in Mediterranean Europe and China, with two recognized subspecies and hundreds of cultivated varieties. The plant has been used for millennia as a seasoning, culinary ingredient and traditional medicinal remedy across civilizations including Babylon, Egypt, Rome and China, and its organosulfur compounds give it its distinctive pungent smell and taste. China accounts for about 73 percent of the worlds garlic production as of 2024.
