Hedgehog Mushroom

The hedgehog mushroom, Hydnum repandum, also called the sweet tooth, is an edible fungus easily recognized by the cluster of soft spines it bears beneath its cap in place of gills. Its orange, yellow or tan fruiting body bruises orange-yellow, has white flesh and a pleasant aroma, and forms a mycorrhizal partnership with trees in coniferous and deciduous forests across Europe and North America, fruiting from summer into autumn. It is considered a choice edible for its sweet, nutty taste and crunchy texture, and has no poisonous lookalikes.
