Auricularia auricula-judae, commonly known as wood ear or jelly ear, is a species of edible fungus found across Europe and beyond, growing especially on dead and living elder trees. Its rubbery, ear-shaped fruiting body gives the species its common names, and related Auricularia species are eaten in East Asian cuisine, valued more for their gelatinous texture than for any strong flavor of their own.
