Saccharomycetales is an order of fungi in the kingdom Fungi and division Ascomycota, and the only order in the class Saccharomycetes. It comprises yeasts and yeast-like organisms across thirteen recognized families, including Saccharomyces cerevisiae, the yeast species widely used in laboratory research and industrial fermentation.
