Ostrea edulis, commonly known as the European flat oyster, is a species of oyster native to Europe. In Great Britain and Ireland it is known locally as the Colchester native oyster, mud oyster or edible oyster, while in France it is called huitres plates, except for the variety harvested from the Belon River estuary in Brittany, which is known as the Belon.
