Lactobacillales

Lactobacillales is an order of Gram-positive, low-GC, acid-tolerant bacteria, generally nonsporulating and nonrespiring, that grow as rods or cocci and share a common fermentative metabolism. Known collectively as the lactic acid bacteria, they produce lactic acid as the major end product of carbohydrate fermentation and are common in decomposing plant matter and dairy products. Their widespread presence in food and their contribution to healthy mucosal microbiota has earned many species generally-recognized-as-safe status, and their lactic acid output helps inhibit the growth of spoilage organisms.
